Water Fountain at Bellagio

Sorry there is no sound.....not sure what happened.  Very cool none the less!

Favorite Recipe

I was giving an opportunity to write a guest post on a recipe. SO I thought I would take the time, write a post on my own blog and share it.

I knew right away what recipe to pick....didn't get the post written until now.....but the food choice was easy!  What is your favorite kind of food?? Any doubts? Did you have to think about it? I SURE didn't!

I could easily live off of it... enchiladas, chips and salsa, guessed it ~ MEXICAN food.

Tortillas, fajitas, margaritas...yummmmmy! Oh! And you can't leave out guacamole! I am getting hungry just thinking about it.  Do you have a favorite place to get that favorite food?? Locally, it is easy for me.  An hour from here North, yep it. An hour from here South, yep got that too.  But if I had a helicopter, could go and come back in the same night....Yep I know that one too. LOL Ok, so you get it I am sure. I love Mexican food, could eat it ever day and know lots of good places to go. ...cough*cough*Pappasito's Cantina...cough*cough* So without further delay....I present to you....

Mexican Chicken

4 whole chicken breasts (about 3 lbs.) *see note
1 sliced onion
2 or 3 carrots
2 stalks celery
1/2 cup milk
1 can condensed cream of mushroom soup
1 can condensed cream of chicken soup
15 oz can of chili
4 oz. salsa
1 small onion, finely chopped
12 corn tortillas
1/2 lb shredded sharp cheddar cheese
1/2 shredded Monterrey jack cheese
(Just buy the Fiesta shredded blend at Walmart and you got both cheeses and it is already shredded)

*For the chicken - I usually buy a 5lb bag of leg quarters (has great flavor) or the least expensive chicken with bones and skin.  You may use boneless/skinless chicken breasts. This does simplify the process but makes the chicken a little drier.  If you choose to use the breasts, you will not need the next step.  Simply cook the breasts thoroughly and cut into small pieces or shred the chicken. I would also recommend that it be boiled in chicken broth to help add more flavor. OR boil with the vegetables and create more flavor.
First: Slice 1 onion, carrots and celery and place in large pot with chicken. Bring chicken and vegetables to a boil for about 10 minutes.  Simmer for an additional 30 minutes and remove from heat.  Cool the chicken and remove the skin and bones.  Cut the meat into 1 inch pieces or shred.  Discard broth and vegetables or save for soup.

Combined in a bowl: Milk, Cream of Mushroom and Chicken soup, chili, salsa and finely chopped onion. Mix well and set aside.

Also have ready: Corn tortillas torn into small pieces and both kinds of shredded cheese.

In a 9x13 pan: Place a layer of half of the chicken and lightly salt.  Add half of the tortillas, next half of the sauce mixture and half of both kinds of cheese.  Repeat the layering making sure you end with the cheese.  Bake immediately at 350 degrees for 45 minutes.  Let stand 10 minutes before serving.

Serves 10 but freezes/re-heats well for leftovers

There you have it! One of my families' favorite meals....until we learned that my son had a milk allergy.  Only took them 14 years to find what the problem was but that is a whole other blog post ;)....which I just decided was a great idea!

I have it!

I was invited to do a review of an all natural pain reliever called Noxicare. I was very nervous about providing a review for a product that I had never heard of but now I know why they do ask bloggers to share!

Be sure to click their website log above and "Like" their facebook page!

I first received the Noxicare, opened it and immediately thought that it would never work. It did not smell like it had anything in it.  Odd I thought, as how do they except it to work if they don't put in any of the typical ingredients that we have all come to expect; like menthol.  There was definitely not any in this stuff. So I had to go check out the website and look into their ingredients to see what it was. I found this on their website.....

One of the most powerful natural pain relievers known to exist; recognized for its anti-inflammatory properties. Turmeric is a powerful herb in the ginger family that contains curcumin as its active ingredient. Curcumin provides the health benefits of turmeric and turmeric extract, useful as an anti-inflammatory agent and as an antioxidant. Studies have shown that turmeric may help reduce the pain and irritation experienced by patients with irritable bowel syndrome and its anti-inflammatory properties help to naturally relieve pain associated with arthritis by reducing inflammation in the joints.
Willow bark

Willow Bark

Has been used for natural pain relief and inflammation since the time of Ancient Egypt and Greece. The use of willow bark dates back thousands of years when patients chewed on the bark to reduce fever and inflammation. Willow bark continues to be used today for the treatment of pain (particularly low back pain, tension headaches and osteoarthritis), and inflammatory conditions such as bursitis and tendinitis.

Helps relieve muscle pains, arthritis and rheumatism, and is a catalyst for improving the effectiveness of other herbs. Ginger is an effective anti-inflammatory agent used for thousands of years to alleviate arthritis, headaches, rheumatism and sore throat, while also naturally relieving muscle strains and knee pains experienced by athletes. The medicinal part of ginger is the rhizome, an underground stem that most people refer to as the root. Western herbalists classify ginger as a carminative, which settles the intestine and eases pain by removing gas from the digestive tract. This versatile and useful herb also serves as a catalyst for improving the effectiveness of other natural pain relieving herbs found in Noxicare™.

Rosemary Extract

Has served a variety of purposes including topical use for joint or musculoskeletal pain. Ancient Egyptians knew to relieve musculoskeletal pain by rubbing rosemary extract oil into their skin. Today, rosemary has become important due to its natural pain relief ability, as well as stimulate hair growth, boost mental activity and relieve respiratory problems.
Holy basil

Holy Basil

Properties include anti-inflammatory, antioxidant, antibacterial and antiviral. Holy Basil is a plant indigenous to India and extremely well-regarded as beneficial for many different health problems. Holy basil inhibits inflammatory-causing enzymes that contribute to arthritis and other types of pain caused by inflammation. Holy basil has antimicrobial and anti-viral properties, and expectorant properties as well, useful in respiratory tract infections and during respiratory stress.

Boswellia Extract

Boswellia is a genus of trees native to India known for their fragrant resin which has many pharmacological uses, particularly as an anti-inflammatory and pain reliever. Boswellia extracts and oils have been used to treat back pain and has been compared in effectiveness to steroids in treating Crohn’s disease and other intestinal problems—without causing ulcers like aspirin family medications.
Alpha Lipoic Acids

Alpha Lipoic Acids

Antioxidants used for treating diabetic neuropathy and increasing blood flow to the nerves. Acid Alpha Lipoic Acid is a natural pain relief antioxidant made by every cell in the body, and is also found in foods such as red meats and spinach. It is well known for its proven pain relieving abilities, particularly against numbness, burning and pain often associated with diabetic neuropathy.  ALA also helps vitamins C and E work better, and is used to treat and detox the liver.

I was really interested in the ingredients and what it had to say about each one.  They are definitely all natural.

The first couple of times I tried it, I didn't know what to think.  I would put it on at night and go to bed.  It didn't take me long, DUH, to realize that I wasn't going to be able to review a product if I wasn't awake to realize the full benefits from it. I did, however, ask my husband a few questions after the third morning.  I have RLS, Restless Leg Sydrome, and I wanted to know how it was working on that.  Hubby said that he did notice a difference in my constant kicking.  Yay for me...And for him for that matter!  Now RLS isn't listed on their site but it did cause a noticeable difference. So, it was onto the daytime test :)

I could list the medical issues that I have but that isn't the point and honestly you would probably think I was crazy. There is several medical aliments listed on their website as to what it was specifically designed for such as Musculoskeletal PainArthritis, Fibromyalgia, Neuropathy, and (surprisingly enough) Tension Headaches.   So I decided to look around the website and see what else I could find.  I found an article about tennis elbow. I was diagnosed with it some time ago and have been doing really well after about 6 weeks of physical therapy. Recently though, it has been acting up and I decided that this would be a perfect test for the Noxicare

I put it on my arm/elbow area and waited. I can honestly say within 15 minutes I noticed a difference in my arm.  Crazy right!? I thought so. It didn't have an odor, of any kind, it worked on things that they didn't even tried to claim it did AND I saw relief quick!  What more could you want? How about an inexpensive price :) You can currently purchase it online for just $19.95 for a 3.5oz tube.  The website said that they are working on getting it into pharmacies as well.  They have a listing that says you will be able to get it in capsule form soon too.  I hope I get the chance to try those too!  Try it and let me know what you think!

I did receive the 3.5 oz tube to try for free but did not receive any other compensation from the company nor did they try to influence my review!
I received one or more of the products mentioned above for free using Regardless, I only recommend products or services I use personally and believe will be good for my readers.

I learned a lot....

Going to the Scentsy convention last year, I came back with a renewed energy. Bouncing off the walls telling my husband all the wonderful things that we saw, did and learned.  He thought was I was crazy. Little did he know! Here is a picture from last year!

Good times were had by all and this was our team that went. The first night we had a concert in the Ft. Worth Stockyards ~ Clint Black! Yep, Scentsy rocks.

This years excitement was no different. The Scentsy Convention was in Las Vegas this year! I have always wanted to see Vegas. I am not a gambler or even a party girl but I like to see new and different places.  Hubby and I went without children, of course, so we took it as a little vacation get a way.

I had fun even on the way there! My friend Heather and I were on the same flight so we decided it was best to ride up together, with our hubbies of course! Heather is super talented and creative. On the way there, she painted stars on my feet.  We laughed and enjoyed our time together.  On the way back....we talked too but I am pretty sure that we were way to tired LOL.

Our feet :)

Heather and I

Baby Mollie got a massage in while waiting to board

My Baby Mollie and Heather's Lenny resting up for the big trip

Hubby and I on the plane waiting for take off

First night of convention is about getting together. They throw us a party where we can all talk and get to know each other, find new friends and reconnect with friends from years past.  We got to roam 3 different parties this year :) How cool is that?! One even had Cirque du Soleil performers! That was where we went right off the bat.  We got to see several girls do their acrobatics with what looked like giant scarves hanging from the ceiling.  It was impressive to say the least!

Thursday we got to hear from Heidi and Orville Thompson, the founders of Scentsy.  They spoke many times throughout the convention. The are both very fun! We also got to hear from lots of corporate employees through the whole thing!  We also got a surprise visit from Donny & Marie Osmond! They were fun to watch and I really enjoyed one of their songs, We Will Find A Way.  I really liked that one! We also got to hear from Laura Stack, Productivity Pro.  If you think it, ink it! One of my new motto's. She talked about how easily distracted most of us are and we need to learn to focus.  So if you think it, ink it and you can do it later.  I now have an app on my ink involved but I do note it now!!

Thursday night we headed out as team to go eat! It was wonderful because I got to talk to team members that I hadn't before. We also got to get a glimpse of the strip on the way back to the hotel.  I know that several of the team even went out on the town that night!

(above) The Ladies from our awesome team!

My best friend and Director!

Yes he is a goof! & No....I didn't know he did that!!

That is better!!!

They also announced the super new and amazingly awesome new product line.....GRACE ADELE! I am super pumped about this! LOVE LOVE purses and now I don't have to leave my house to get them ;o)

Just a mere glimpse of the new products!

Friday was my favorite day of Convention. We got to hear from two AMAZING speakers.  We got to hear from Carrie Wilkerson, The Barefoot Executive I wish I had taken more pictures but she was so engaging and funny it didn't even cross my mind.  I have already bought her book! Can't wait until it gets here so I can start reading it.  Also on Friday, we got to hear from Dewitt Jones. He is a professional photographer who worked for National Geographic for many years.  He was also a movie producers.  He was soft spoken but kept everyone's attention.  He shared so many beautiful pictures that he had taken over the years and they were very moving. His main message, "Celebrate what's right with the world" He talked about changing your outlook in life and it will change your life. I probably spent my entire childhood looking at his pictures without even knowing it. My Dad always had a subscription to the magazine.

Friday night is always fun! Awards, more entertainment and lots of laughter! To start off the night, we had a local comedic magician come out. OMGosh! I haven't laughed that hard in a long time.  He had us all rolling! If you are ever in Vegas I highly recommend Mac King for sure! Some of the stuff that consultants did when he was using them for the tricks even had HIM laughing.  Loved watching everyone receive their awards and can't wait to be up there with them next year!! After the awards were done, we had Colbie Caillat perform! I am telling you Scentsy goes all out! They Rock! Her songs "Bubbly" and "Brighter than the Sun" are my favorites!

Saturday was about hubby and I taking time together.  We did get up though on Saturday morning and go with several of the team members to see ATM.  Know what that is??? Acrylic Tank Manufacturing :) The place where the Animal Planet show "Tanked" is filmed! It was fun! We got to meet Redneck, Wayde and Brett! Got autographs and pictures. They were super nice people too. Real down to earth. It was great getting to see them. After that we went back to hotel and had pizza! We don't get pizza because of our son's food allergies so it was a real treat. It's the little things I know.

We headed out to see some sites before we left (which was way to early the next morning. We had to get up at three in the morning to make sure we got to the airport in time!) One of the sites was Mandalay Bay's Shark Reef Aquarium. It was really neat and we probably spent an hour and a half just in there.  Took lots of really good pictures. (They are on hubby's phone so I don't have those yet)

We visited M&M World...four stories of candy and memorabilia.  Hubby was in heaven! We saw the Coca-Cola store and then it was off to the Bellagio.

The inside was very pretty and a lot of decorations were made up of flowers. Bees, lady bugs and giant flowers.  We got a few pictures but I would have loved to gotten more.

Then it was onto the Dancing Fountains outside of Bellagio. So very cool! I took a video but for some reason the sound didn't work.  Also met another set of Scentsy consultants while we were watching. I just love talking to others!

Because of the closeness that we all feel with each other, they have changed the name from convention to The Scentsy Family Reunion! I love the change :) Next year our reunion is in Indianapolis IN.  My room is already book!!

Back "Pack" to School Giveaway

Welcome to the Back "Pack" To School With Green Supplies Giveaway Event hosted by Green Apple Supply for sponsoring this fantastic giveaway!

As parents: Stephanie and Robert Tobor, founders of Green Green Apple Supply want the best for our kids. And as global citizens, they were faced with the responsibility to care for our planet, and each other. They began as an endeavor to feed our family natural, organic foods has grown into a much larger enterprise. Learning about potential dangers to children, and the planet, in cleaning supplies, household goods, office supplies…everywhere. The worsening state of our environment, climate change, and increasing levels of toxins showing up in children’s blood work combined to create a great passion for exposing our family to only the cleanest, most wholesome products.  When they had inquired as to why individuals were choosing traditional products rather than opting for eco-friendly versions, typically given one of two answers:

1. Green products are too expensive.
2. There are too many choices, and some are not effective.

This was the beginning of Green Apple Supply! By utilizing economies of scale, wholesale purchasing power, and personal product experience, their endeavor to make it easier for anyone to purchase Earth-friendly products. Keeping overhead low and this is a non-profit effort. Products are sold as close to cost as we can, while still keeping the lights on. Why? Because we think it’s the right thing to do.
